Classic Vanilla Ice Milk

  • 1 ¾ ounces powdered milk (about ¼ cup; 50g)
  • 1 teaspoon (4g) Diamond Crystal kosher salt (plus more if desired); for table salt, use about half as much by volume or the same weight
  • 28 ounces whole milk (about 3 ½ cups; 795g), divided
  • ½ teaspoon vanilla extract
