Mini Sausage Casseroles

Ingredients
  • Cooking spray
  • 1 pound breakfast sausage
  • 1 med onion, finely diced
  • 15 large eggs
  • Salt
  • ¼ t black pepper
  • ¼ t chili powder
  • 1 c grated cheddar
  • 1 med green bell pepper, diced
Steps
  1. Oven to 350
  2. Coat 18 muffin cups with spray
  3. In large skillet, cook sausage over med high heat til, adding onion about half way through.
  4. Continue to cook sausage til onion is soft and meat done. Cool slightly.
  5. Whisk together eggs, salt, black pepper, and chili powder
  6. Add cheese and bell pepper
  7. When Sausage is cooled some, add to egg mixture and stir
  8. Use a ⅓ c measure to scoop mixture into muffin cups
  9. Bake til puffy, 20 to 22 min. Run a knife around edges and remove
  10. Serve warm
