Healthy Sourdough Banana Bread Muffins
Ingredients
  • 2 large bananas, mashed (or 2 and ½ small-medium bananas)
  • ½ cup melted butter
  • ¼ cup Greek yogurt
  • ¾ cup coconut sugar
  • 1 cup sourdough starter
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1 cup all purpose flour
  • ½ cup old fashioned, rolled oats
  • ½ cup almond flour
  • 1 Tbsp. chia seeds (or flax or hemp)
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. cinnamon
  • optional: ¾ cup chocolate chips or blueberries
