Smoky White Beans and Brussels Sprouts
Ingredients
  • 2 tablespoons olive oil
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 garlic cloves, chopped
  • ¾ teaspoon Spanish smoked paprika (pimenton)
  • ½ teaspoon fine sea salt, plus more to taste
  • ¼ to ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ½ cups cooked or canned no-salt-added white beans (from one 15-ounce can), drained and rinsed
  • ¾ cup drained bean cooking liquid or water
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh chives
