Ingredients

  • 1 package (5/16 ounce) dry yeast
  • ½ cup warm water (110° F)
  • ⅔ cup granulated sugar, plus ½ tsp
  • 3-½ cups unbleached all-purpose flour, plus 1 Tbsp
  • 4 Tbsp unsalted butter, brought to room temperature
  • 2 extra large eggs
  • 1-½ Tbsp vegetable shortening
  • 1-½ Tbsp vegetable oil, plus 1 Tbsp
  • 1 Tbsp finely ground mahlab
  • ⅓ cup warm milk
  • 1 egg yolk for glaze
  • Poppy seeds to top rolls (may substitute sesame seeds if desired)

  • 8 oz pitted chopped dates
  • ½ cup chopped walnuts
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • 2 to 3 Tbsp honey
