Layered potatoes with herbs and garlic
Ingredients
  • 2 ½ lbs white or red rose potatoes, peeled
  • 1 tablespoon olive oil, plus extra for drizzling
  • 1 tablespoon unsalted butter
  • 2 large onions, thinly sliced
  • Salt and freshly ground black pepper
  • 3 cloves garlic, finely chopped
  • ½ teaspoon dried oregano, crumbled
  • ½ teaspoon dried marjoram, crumbled
  • 6 sprigs fresh thyme, leaves only, finely chopped
  • 2 cups chicken stock, preferably homemade
  • 1 ½ cups coarsely grated Swiss cheese (optional)
