Pesto Genovese (Traditional Italian Pesto)
Ingredients
  • 3.5 ounces Genovese basil leaves (sweet basil) by weight
  • 1 cup Parmesan cheese, shredded
  • ¼ cup Pecorino Sardo cheese, shredded
  • ⅓ cup pine nuts
  • 1 clove garlic
  • ½ tsp coarse sea salt
  • ½ cup extra virgin olive oil (plus 1 tbsp to add on top)
