Instant Pot Italian Style Lamb Shanks
Perfect, fall off the bone, Italian Style Lamb Shanks cooked in an Instant Pot and served on a bed of creamy parmesan loaded mash with gravy and topped with homemade gremolata.
Ingredients
  • 1.6 kg free range lamb shanks 3 small lamb shanks
  • 2 large red onions peeled and cut into quarters
  • 6 garlic cloves
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 30 ml capers
  • 15 ml fresh black peppercorns optional
  • 1 lemon zested and juice of half of the lemon
  • 375 ml hot beef or vegetable stock Feel free to replace 125 ml of the stock with dry white wine
  • 10 ml corn flour
  • salt and pepper to taste
  • subheading: Gremolata:
  • 15 g Italian parsley finely chopped
  • 1 garlic clove crushed
  • 1 lemon zest and juice
  • 60 ml olive oil
  • subheading: To serve:
  • Mashed Potatoes made with butter, cream, lots of grated parmesan cheese and a pinch of nutmeg Recipe in notes below
