Lasagna Soup

Ingredients
  • 2 lbs. ground Beef or Turkey
  • 4- 15oz. cans of tomato sauce
  • 1- 32 oz.  carton of chicken broth
  • 8 oz. cottage cheese (blended)
  • ½ box lasagna noodles
  • Seasonings to taste with: Basil, Garlic Powder, Onion Powder, salt, black pepper
Steps
  1. Brown meat in the skillet and drain fat.
  2. While cooking the meat, bring water to a boil in a separate pot.
  3. Combine tomato sauce, chicken broth, and all the spices.  Bring to a simmer for 10 minutes.
  4. Add  cheese & cooked meat to the sauce.  Reduce the heat and cook “low and slow” for another 15 to 20 minutes, until the sauce thickens.
  5. Add a tablespoon of vegetable oil to the water (to prevent sticking) and add the noodles.  Once noodles are done cut into pieces.
  6. Add noodles to the soup.
  7. Serve and enjoy!
Notes
  • You may use rotini noodles in place of lasagna noodles.
  • Sprinkle grated parmesan cheese on top as a garnish.
