Basil Garlic Chicken
Ingredients
  • 2 lbs chicken breast
  • 5 to 7 cloves of peeled garlic chopped or roasted garlic
  • ½ tsp kosher salt with the garlic
  • 10 sprigs of fresh thyme stripped
  • 2 oz fresh basil picked from stem
  • ½ tsp chili flakes
  • ⅓ cup extra virgin olive oil
  • Fresh lemon and Maldon salt to finish
  • A Mortar and Pestel
Steps
  1. Peel and cut up garlic
  2. Put Garlic with salt in Mortar and Pestel and start grinding up
  3. once mushy add the thyme and grind in
  4. Now start adding the basil in several leaf's at a time
  5. Add Chili flakes
  6. Once ground up now add olive oil
  7. Flatten chicken out to be same thickness with mallet
  8. Poke holes in chicken with fork
  9. Add marinade to chicken in Ziplock bag and let sit at least 4 hrs preferably over night
Notes
  • If you like it spicier add 1 Tsp of Chili flakes instead of the ½
  • Fresh parsley is a good to add as well with the basil
