Ingredients
  • Butter
  • White onion
  • Garlic
  • All-purpose flour - this is how the soup is thickened
  • Milk - you can use dairy milk or non-dairy. If you use a non-dairy milk, make sure it is unflavored and unsweetened.
  • Low-sodium chicken broth - you can use vegetable broth if you want to make it vegetarian
  • Broccoli - you can use fresh or frozen broccoli but frozen will require longer cooking time. If you are using frozen broccoli, make sure you get the bag with only florets
  • Carrots - these get finely grated and become super soft when cooked
  • Cheddar cheese - use sharp or mild cheddar cheese, whichever you prefer!
