An Interesting Medley of Ingredients!!!
  • 1 tablespoon oil
  • 1 medium onion, sliced or diced
  • 1 small Zucchini sliced or diced
  • 1 red pepper, sliced or diced
  • 6 stalks asparagus, cut into chunks
  • 6 stalks of broccoli, cut into chunks
  • 70 g (~ ½ cup) frozen sweetcorn
  • 3 cloves garlic, minced
  • 2 teaspoon smoked paprika
  • 70 ml (~ ¼ cup) vegetable stock
  • 2 tablespoon sour cream
  • 2 tablespoon fresh parsley, chopped
  • Salt
  • Black pepper
  • To serve optional: pasta, rice, or potatoes
