Ingredients

  • ¼ pound fresh mozzarella, grated on the large holes of a box grater
  • 2 large egg yolks

  • 2 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, small diced
  • 2 ribs of celery, small diced
  • 1 28 oz can of whole plum tomatoes
  • 1 cup dry white wine
  • 1 fresh bay leaf
  • 6 sprigs fresh oregano
  • subheading: Pomodoro:
  • ¼ cup Olive oil
  • 1 small onion (1c), finely diced
  • 2 cloves garlic, minced
  • ¼ tsp. chili flakes
  • Small bundle fresh oregano
  • Small bundle fresh thyme
  • 2, 15oz. cans whole peeled tomatoes, crushed with your hands
