Keto Chocolate Breakfast Custard

Ingredients
  • 2 cup full-fat coconut milk or heavy cream
  • 1 T powdered gelatin
  • 1 cup almond milk
  • ½ cup Swerve XXX
  • ½ cup cocoa powder
  • 1 t vanilla
  • ⅛ t fine sea salt
Steps
  1. Sift gelatin over ¼ cup of milk/cream in medium bowl and let soften
  2. Heat remaining 1¾ cups of milk/cream in microwave-safe bowl for 1 minute
  3. Whisk the sweetener & cocoa into the cool mix, stir until combined
  4. Pour hot mixture into gelatin mix while stirring constantly.
  5. Add vanilla & slat
  6. Pour into 4 oz serving cups
  7. Cool in fridge for 1 hour
  8. Store extra in airtight container with plastic wrap in fridge for up to 4 days or freezer for 1 month
