Vegan SWEET POTATO GOCHUJANG SOUP+ SMOKY CHICKPEAS
Ingredients
  • 2 small-medium sweet potatoes (mine were raw 350gr)
  • 1 white onion
  • 2 to 3 cloves garlic
  • 1 tbsp gochujang paste
  • 1 block (300gr) silken tofu
  • 2 to 3 Tbsp nooch
  • Vegetable stock (it depends on how liquid you want your soup. start with at least 500ml and see how you go)
  • 1 can (240gr drained) chickpeas
  • 1 heaping tsp smoked paprika
  • ½ tsp cumin
  • 1 tsp onion powder
  • Rice noodles (we used vermicelli)
  • Spring onions, sesame seeds
  • Oil, salt, pepper
