Skinny Vegan Chocolate Chip Muffins

  • ¾ cup granulated sugar
  • ½ cup unsweetened almond or cashew milk (or your favorite milk)
  • ⅓ cup vegetable or canola oil
  • 2 teaspoons vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt, or to taste
  • ¾ cup mini chocolate chips, plus more for sprinkling on top if desired
