Ingredients
  • subheading: Chicken Fried Steak:
  • 8 thin round steaks about 4 to 6 inches in diameter
  • 2 eggs
  • ½ cup full fat buttermilk
  • 2 cups unbleached flour (more or less)
  • Peanut oil
  • Salt and Pepper (about ½ tsp of each
  • ¼ tsp baking powder
  • Pinch of Cayenne

  • 2 slices chopped bacon
  • 1 chopped onion
  • Green beans (cooked separately)
  • ⅓ cup of flour
  • ¼ cup drippings or butter or combination
  • 3 cups of half and half cream, heated to a simmer
  • Salt and pepper to taste
  • Few drops of Louisiana Hot Sauce
Steps
  1. Let the meat come to room temperature, about 30 minutes and no more
  2. Preheat oven to 375F
  3. Beat the eggs and buttermilk together and set aside
  4. Mix the flour, salt, pepper, and cayenne together on a plate and set aside
  5. Dredge one of the steaks through the flour on both sides, dip in the egg and then dredge through the flour again
  6. Repeat with remaining steaks
  7. Heat ½ oil in a heavy frying pan over medium high heat until a drop of water pops when dropped in
  8. Add steak and fry on both sides until golden brown
  9. Remove from oil and drain briefly; place on cookie sheet in oven
  10. Repeat with each of the other steaks
  11. Turn the oven off but leave the steaks in there while you make the gravy
  12. Serve with a generous amount of gravy over top

  16. 2 slices chopped bacon
  17. 1 chopped onion
  18. Green beans (cooked separately)
  19. ⅓ cup of flour
  20. ¼ cup drippings or butter or combination
  21. 3 cups of half and half cream, heated to a simmer
  22. Salt and pepper to taste
  23. Few drops of Louisiana Hot Sauce
  24. I always make seasoned green beans to go with chicken fried steak.
  25. To do this I saute 2 slices of chopped bacon and 1 chopped onion in a pan to add to the green beans.
  26. I leave the drippings in the pan, flavored with the onion and bacon, and use this same pan to make the gravy.
  27. You should try it, it gives an amazing flavor.
  28. Whisk the flour into the hot drippings (or melted butter) until it forms a clump
  29. Slowly whisk in the cream, beating to ensure there are no lumps
  30. Simmer, stirring, until the gravy thickens
  31. Taste and add salt and pepper and hot sauce
  32. Serve hot over the chicken fried steak
