Chicken and Broccoli Stir Fry

  • ½ tablespoon + ¼ teaspoon coarse salt (not table salt)
  • 2 tablespoons Shaoxing wine (see note below)
  • 2 tablespoons sesame oil
  • 4 tablespoons vegetable oil , divided
  • 1 large head of broccoli , chopped into bite-sized florets
  • 1 medium sweet onion , cut into 1-inch pieces
  • 1 teaspoon chili garlic sauce
  • ¼ cup water
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • ⅓ cup water
  • 4 scallions , diced
  • Cooked white rice , for serving
