Easy Bouillabaisse with Snapper

Ingredients
  • ¼ cup Woolworths Select Spanish mellow olive oil
  • 1 onion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 garlic cloves, finely chopped for soup and 1 clove for rouille
  • 1 tbs Woolworths Select tomato paste for soup and 1 tsp for rouille
  • 1 cup dry white wine
  • 4 ripe roma tomatoes, quartered and roughly chopped
  • Large pinch of saffron for soup and a large pinch for rouille
  • Strip of orange rind, optional
  • 2 tsp Homebrand caster sugar
  • 150g cream delight potatoes, quartered and cut into 1cm-thick slices
  • 500g Australian fresh skinless, boneless snapper fillets, cut into 4cm pieces
  • 18 thawed prawn cutlets, from the seafood counter
  • 18 scallops, roe discarded
  • Chopped fresh continental parsley, to serve
  • Crusty bread, to serve
  • Lemon cheeks, to serve
  • 50g roasted red capsicum, for rouille
  • Small pinch Woolworths Select cayenne pepper, for rouille
  • 1 cup Woolworths Select whole egg mayonnaise, for rouille
