Donna's IP Ham and White Bean Soup

Ingredients
  • 2 tablespoons olive oil
  • 8 to 16 ounces cubed ham
  • 2 to 3 cans white beans (15 oz each), drained and rinsed (see note)
  • subheading: Vegetables:
  • 1 yellow onion (diced)
  • 1 tablespoon garlic (minced)
  • ½ to 1 c red bell pepper (diced)
  • 1 to 2 c carrots (diced)
  • 1 to 2 c celery (diced) (optional)
  • 1 to 2 c potatoes (diced) (optional)
  • subheading: Spices:
  • 1 tsp dried parsley
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ½ tsp marjoram
  • ½ tsp oregano
  • ½ tsp ground black pepper
  • 3 bay leaves
  • subheading: Liquid:
  • 4 c vegetable stock or chicken broth
  • up to 3 c water or additional broth (optional)
Steps
  1. Set Instant Pot to sauté.
  2. Sauté the diced onion and garlic in the olive oil for about a minute.
  3. Add the veggies, ham, beans, and spices.
  4. Add the 4 cups of broth. Add water or more broth if you want a thinner soup.
  5. Cover with lid and seal (make sure valve on lid is set to "sealing" position). Cancel the sauté and set time to 5 minutes on high pressure.
  6. Once cooking is complete do a quick release and turn off the IP.
  7. Carefully remove cover and stir. You may want to pick out the bay leaves and toss them.
Notes
  • Original recipe calls for cannelini beans but I used 1 can great northern and 1 can white navy beans as that's what I had. You could also combine white beans with brown navy beans. (Latest batch included 1 can great northern and 2 cans white navy. I like it but this may be too many beans for some folks!)
  • If you have no oregano or marjoram, suggest substituting basil.
  • Added ~1.5 c additional broth first time, a bit watery. Didn't add extra broth in 2nd batch and I liked it better.
  • Used 12 to 14 oz ham which was fine but more or less would also be okay.
  • Can substitute frozen carrots; just add in after cooking.
  • More veggies would be welcome, e.g., zucchini, cabbage, peas, kale, etc. Latest batch included 2 quarts finely chopped carrots, potatoes, yam, celery, red bell pepper, onions, and garlic, and IMHO I could have added more.
