Lemongrass Chicken Curry @ Not Quite Nigella
Ingredients
  • 2 sticks lemongrass
  • Oil for frying
  • 1 onion, peeled and chopped roughly
  • 2 cloves garlic, peeled
  • 1 inch ginger, sliced
  • 4cm stick of turmeric, peeled
  • 2 small chillies (1 small if you don't want it too hot or use larger chillies if you want it milder as they are less spicy)
  • 2 tomatoes
  • 2 tablespoons fish sauce
  • 1.5 teaspoons sugar
  • 500g/1.1lb chicken breast or thigh, cut into bite sized pieces
  • 1 cup water
  • ½ cup coconut cream (optional)
