Pink Beet Hummus
Ingredients
  • 1 can of chickpeas, rinsed and drained (conserve a bit for topping)
  • 2 cloves of garlic, smashed
  • ½ teaspoon ground cumin
  • ¼ cup freshly squeezed orange juice
  • ½ cup chopped steamed beets(conserve a bit for topping)
  • 3 tablespoons of tahini
  • 4 tablespoons of olive oil
  • sea salt to taste
  • Ice water as needed for blending
