I have vague childhood memories of my grandmother making this soup whenever I would sleep over at her house. It was my first introduction to "spicy" food and I loved it.

Ingredients
- 1 lb of frozen or your favorite recipe meatballs, cooked
- 2 tbsp oil
- ½ cup white onion, diced
- ½ cup carrot, chopped
- 1 cup celery, chopped
- 1 tbsp minced garlic
- 4 cups chicken broth
- 1 cup cubed potatoes, any variety
- 1 tsp Worcestershire sauce
- 1 tsp ground mustard
- 1 tsp hot sauce or to taste
- 1 cup corn
- 16 oz cheese sauce (Velveeta or Cheez Whiz or similar)
Steps
- In a large sauce pan on medium, heat oil until shimmering.
- Add onion, carrot and celery and cook until onion begins to turn translucent.
- Add garlic and cook until fragrant.
- Pour in broth and add potatoes, Worcestershire sauce, mustard, and hot sauce.
- Cook at a low simmer until potatoes are fork-tender.
- Add meatballs, corn, and cheese sauce and cook a few minutes more until heated through.
