Cheesy Meatball Soup
I have vague childhood memories of my grandmother making this soup whenever I would sleep over at her house. It was my first introduction to "spicy" food and I loved it.

Ingredients
  • 1 lb of frozen or your favorite recipe meatballs, cooked
  • 2 tbsp oil
  • ½ cup white onion, diced
  • ½ cup carrot, chopped
  • 1 cup celery, chopped
  • 1 tbsp minced garlic
  • 4 cups chicken broth
  • 1 cup cubed potatoes, any variety
  • 1 tsp Worcestershire sauce
  • 1 tsp ground mustard
  • 1 tsp hot sauce or to taste
  • 1 cup corn
  • 16 oz cheese sauce (Velveeta or Cheez Whiz or similar)
Steps
  1. In a large sauce pan on medium, heat oil until shimmering.
  2. Add onion, carrot and celery and cook until onion begins to turn translucent.
  3. Add garlic and cook until fragrant.
  4. Pour in broth and add potatoes, Worcestershire sauce, mustard, and hot sauce.
  5. Cook at a low simmer until potatoes are fork-tender.
  6. Add meatballs, corn, and cheese sauce and cook a few minutes more until heated through.
Notes
  • Suggestions for toppings: hot sauce, fried onions, sour cream, scallions
