Christmas chocolate cupcakes

Ingredients

  • Very Merry Chocolate Gingerbread Cupcakes w/Date frosting(WFPB)
  •  
  • 1½ cup Spelt Flour
  •  
  • ½ heaping cup Almond Flour
  •  
  • 2 tbsps of Dark cocoa powder
  •  
  • 2 tbsps. tapioca starch
  •  
  • ½ tsp of cinnamon,ginger,allspice
  •  
  • ¼ tsp of nutmeg (optional a dash of cloves)
  •  
  • ¼ tsp baking soda
  •  
  • ½ tsp baking powder
  •  
  • ¾ cup of maple syrup or agave
  •  
  • ¼ cup molasses
  •  
  • 1 tsp of vinegar (I used apple cider)
  •  
  • 1 tsp vanilla extract
  •  
  • pinch of sea salt
  •  
  • ¾ cup applesauce
  •  
  • 2 tbsps. of hot water
  •  
  • Chocolate Icing (this makes a small batch for more just double the ingredients)
  •  
  • Approx 3 to 4 tbsp of date syrup (I didn't measure)
  • Approx 1 tbsp of cocoa powder (I used extra dark)
  • Mix until you get a creamy consistency.
  •  
  • Mix together wet ingredients in a bowl and then whisk together the dry ingredients. Combine wet and dry stir with a whisk until well combined.
  •  
  • Bake at 350 for about 22 minutes. Makes 10-maybe 12ish good sized cupcakes or you can bake in a 8x8 or 9x13  pan as a cake.
