Slow Cooker Spicy Rice & Beans
I modified this recipe quite a bit. I omitted chicken and a chipotle pepper in adobo sauce and changed the method of cooking, and added peppers and onions to it. If you want the original recipe you can find it at www.5boysbaker.com/slow-cooker-spicy-chicken-rice/
Ingredients
  • 1 can (14-½ ounces) Ro-tel tomatoes (mild or regular)
  • 1 can (10 oz) mild enchilada sauce (I used Old El Paso)
  • ½ teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 4 cups cooked rice (brown or white)
  • 1 can (15 ounces) black beans, drained
  • ¾ cup shredded sharp cheddar cheese
  • ¾ cup shredded pepper jack cheese

  • Sour cream
  • Cilantro
  • Diced avocado
