Steamed Chicken with Black Bean Sauce
Ingredients
  • 1½ pounds boneless skinless chicken thighs
  • (cut into 1-inch/1.5cm bite-size pieces)
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon light soy sauce
  • 1 tablespoon neutral oil
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • ¼ to ½ teaspoon salt (I used ½ teaspoon, but if marinating overnight, you can use ¼ teaspoon)
  • ¼ teaspoon white pepper
  • 4 cloves garlic (minced)
  • 1 scallion (finely chopped)
  • 3 tablespoons Chinese fermented black beans (rinsed and drained)
  • 2 to 4 tablespoons water
  • 2 teaspoons cornstarch
