Almond Pastry
Almond pastry with cream filling
Ingredients
  • 2 pie crust circles
  • ½ c grated almonds
  • Egg white whipped
  • Vanilla pudding per package directions.
  • Or, homemade vanilla cream like for banana cream pie.
  • ¼c apricot preserves ( or your choice )
  • Whipped cream
Steps
  1. Lay out 1 crust on a floured pizza stone.
  2. Brush with water and sprinkle with almonds.  Lay second crust over this and roll out slightly.  Fold up edges enough to create a border.  Brush edge of crust with whipped egg white.  Grate more almonds over crust and bake 20 to 25 minutes.  Cool.  Spread with vanilla cream.  Microwave ¼c preserves to runny and pour over.  Layer 4c of fresh fruit over this and pipe whipped cream over that. ( see my whipped cream frosting recipe so cream will keep its shape)  Chill well until ready to serve.
