Itilian Cream Cake with Cream Cheese Icing

Ingredients
  • 1 stick butter
  • ½ c shortening
  • 2 c sugar
  • 5 eggs
  • 2 c flour
  • 1 tsp. baking soda
  • 1 c buttermilk
  • 1 tsp. vanilla
  • 1 cup small cocconut
  • 1 c chopped pecans
  •  
  • subheading: FROSTING:
  • 2 8 oz. cream cheese
  • 2 sticks butter
  • 2 tsp. vanilla
  • 1 32 oz powdered sugar
Steps
  1. Preheat oven 350°.
  2. Cream butter,shortening & sugar.
  3. Add Eggs, cream together.
  4. Combine flour,soda, in mixture.
  5. Add buttermilk & vanilla.
  6. Add cocconut & pecans.
  7. Pour into 3 to 8" round cake pans.
  8. Bake for 25 min.
  9. subheading: FROSTING:
  10. Cream butter & cream cheese.
  11. Add vanilla.
  12. Add powdered sugar a little at a time.
