Low Carb Butter Chicken
Ingredients
  • Chicken breasts (Approx. 550 g total)
  • 1 red capsicum
  • 1 brown onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger, grated
  • 1 can coconut milk (400 ml)
  • 1 can tomato paste (170 g)
  • 1 tbsp coconut or arrowroot flour
  • 2 tsp garam masala
  • ¼ tsp cayenne pepper
  • 1 tsp dried coriander
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 generous pinch salt
  • Juice of 1 lime
  • subheading: To serve:
  • 4 large tbsp coconut or greek yoghurt
  • Cauliflower rice made from 1 cauliflower head (use grater or a food processor or buy pre-made)
  • 4 cups steamed greens of choice or fresh salad leaves
