Ingredients
  • ½ cup short-grain brown rice
  • 1 tsp. saffron threads
  • Salt
  • ½ oz. Parmigiano-Reggiano, grated
  • Freshly ground black pepper
  • 1½ oz. fresh mozzarella
  • ¼ cup whole wheat flour
  • 2 large egg whites, whisked until foamy
  • 1 cup whole wheat panko bread crumbs, such as Ian’s All Natural
  • ¼ cup no sugar added marinara sauce, such as Trader Joe’s
