Ingredients
  • 3 ripe bananas
  • 1 egg, unbeaten
  • ⅔ cup sugar
  • 2 tablespoons light molasses
  • 2 tablespoons olive oil
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts
Steps
  1. Mash bananas well until no lumps remain. You may use a mixer for this or a pastry knife.
  2. Add unbeaten egg. Mix well.
  3. Beat in sugar, molasses and olive oil.
  4. Mix in flour, baking powder, baking soda and salt.
  5. Stir in nuts.
  6. Pour into greased loaf pan.
  7. Bake for one hour or until cake tester comes out clean in a 325 degrees oven.
  8. Note: Many people like to eat it with butter. I prefer to save the calories and just eat the bread! This makes a great bread for a tea party, too! It also freezes well (wrap in aluminum foil and then put into a large ziplock bag). The trick to keep this banana bread moist is to wrap it in aluminum foil.
