Low Carb Sausage Stuffing for Thanksgiving
Ingredients
  • 1 lbs. Sausage, removed from casings
  • 1 tbsp. Olive oil or fat of choice
  • ½ C Diced celery
  • ¼ C Diced red onion
  • 3 Large eggs
  • 2 C Chopped cauliflower, cut into 1½” size pieces
  • 1 C Diced rutabaga, cut into ½” size pieces
  • ½ C Grated Parmesan cheese
  • 1 tbsp. Chopped fresh parsley
  • 3 tbsp. Chopped fresh sage
  • 3 tbsp. Fresh thyme leaves
  • 2 Garlic cloves, finely diced
  • ½ tsp. Salt
  • ¼ tsp. Ground black pepper
