  • subheading: For the pecans:
  • 90g pecans
  • 45g clear honey
  • 150ml whipping cream
  • zest of 2 lemons
  • 1⁄2 vanilla pod, seeds scraped
  • 45g liquid glucose
  • 5g salt
  • 120g caster sugar
  • 60g white chocolate, chopped
