Ingredients
  • 2 ½ cups flour
  • 1 ½ cups sugar
  • 1 ¼ tsp. baking powder
  • 1 ¼ tsp. baking soda
  • 1tsp. salt
  • ⅔ cup shortening
  • ½ cup buttermilk
  • 1 ¼ cup (3) bananas
  • 3 eggs
  • ⅓ cup buttermilk
Steps
  1. Sift first 5 ingredients. Add next 3 and beat for 2 minutes. Add eggs and the 2nd buttermilk and beat for 2 more minutes.
  2. Split between 2 round 9” pans (or you can use 3 round 8” pans if you want a higher cake)
  3. Bake at 350° for 35 minutes (25 to 30 minutes for 3 layers.
  4. Cool the layers completely.
  5. Frost tops of each layer with buttercream frosting (powdered sugar, butter, milk, vanilla) and place thinly sliced bananas on top of the frosting. Put the layers together and frost with whipped cream frosting (heavy whipping cream, powdered sugar, vanilla), covering the entire cake. (You can also put sliced bananas on the top but not long before you’d serve it or they’ll turn brown.)
Notes
  • This in an old recipe - back before pre-sifted flour. And I’ve probably substituted butter for the shortening.
