Lemon Loaf from Company's Coming

Ingredients
  • ½ cup Butter
  • 1 cup sugar
  • 2 eggs
  • ½ cup milk
  • 1½ cups All purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 lemon, grated rind
  •  
  • subheading: Glaze:
  • 1 lemon, juice
  • ¼ cup granulated sugar
Steps
  1. Preheat oven 350°F
  2. In large bowl, cream butter, sugar and 1 egg. Beat in second egg. Blend in milk.
  3. In second bowl thoroughly stir flour, baking powder, salt and lemon rind. Pour over batter, Stir to moisten.
  4. Spoon into greased loaf pan 9 x 5 x 3 inch.
  5. Bake for 1 hours or until tests done.
  6. Combine lemon juice and sugar in small saucepan. Heat and stir to dissolve sugar. Spoon evenly over hot loaf.
  7. Remove from oven and glaze. Cool in pan 10 minutes. Remove from pan.
  8. Cool and wrap.
