Rustic Breakfast Sandwich

An unexpected and delightful mixture of savory flavors make this breakfast sandwich truly spectacular!

Ingredients
  • 1 large egg
  • 1 ciabatta roll
  • goat cheese (plain, not herbed, is best)
  • roasted red peppers (from a jar or fresh)
  • a few leaves of baby spinach
  • mayonnaise
  • salt and pepper
Steps
  1. Pop the ciabatta roll in the toaster.
  2. While bread is toasting, fry the egg to over-easy (runny or slightly-runny yolk)
  3. When ciabatta roll is done toasting and still hot, spread one side with goat cheese and the other side with mayonnaise.
  4. Place egg on ciabatta roll and top it with roasted red peppers and spinach leaves as desired.
  5. Add salt and pepper to taste.
  6. Enjoy!
