Raw Cacao and Peanut Butter Freezer Fudge
Ingredients
  • (all ingredients should be at room temperature in order to blend well)
  • ¾ cup butter or melted warm ghee (I use organic valley pastured butter or kerrigold pure Irish butter since I know the cows were raised on pasture) or any organic or pastured butter. *use ghee if you are sensitive to dairy. Warming it until it is liquified will help all the ingredients blend together more smoothly.
  • To make ghee simply put the butter in an oven safe bowl and warm butter in oven on 200 until milk solids sink to the bottom and butter oil sits on top. pour off butter oil(ghee) to have a dairy free option.
  •  
  • ¼ to ⅓ cup of coconut oil softened (I put mine in a warm oven until soft or you can immurse the whole jar in a cup of warm water)
  • ¼cup organic local raw honey or coconut nectar
  • ¼ cup grade B maple syrup or ½ cup or either sweetener. (I just prefer a mix)
  • 1 cup organic smooth or crunchy peanut butter, nut butter or sun butter (for a nut free version)
  • ½ cup raw organic cacao powder(cocoa powder if that’s all you have)
  • ½ teaspoon of real pink salt or sea salt
  • 1 teaspoon of pure vanilla extract

  • ¼ cup wolf berries or goji berries
  • ¼ cup chia seeds
  • ¼ cup hemp hearts
Steps
  1. **TIP**To use the least amount of dishes possible, start with melted Ghee in a large glass pyrex measuring cup. Start with the ghee and add all of the wet ingredients by adding ingredients until they reach the next measurment mark. For example if you start with one cup of melted ghee and the recipe calls for 1 cup of peanut butter, add until the whole mixture reaches the 2 cup mark and so on. This way you don't have to clean out sticky measuring cups and multiple spatulas.
  2. mix all ingredients together until smooth.
  3. Pour into molds or a 9x9 glass dish and place in the freezer to set the fudge. I store mine in the fridge until it sets since i dont have a flat enough space in my freezer, the transfer to freezer to store.
  4. Keep in the freezer. Will soften a bit in the fridge, and will melt to the consistency of peanut butter at room temperature.
