Cauliflower and Apples with Thai Almond Butter Sauce
Ingredients
  • ⅛ teaspoon finely grated zest and 1 tablespoon fresh lime juice (from 1 lime), plus an optional 2 limes, cut into wedges, for serving
  • 1 tablespoon Thai red curry paste, such as Thai Kitchen brand
  • 2 tablespoons coconut milk
  • 2 tablespoons coconut aminos (see headnote)
  • ¼ teaspoon (2 packets) monk fruit extract (such as Monk Fruit in the Raw brand)
  • ¼ cup raw almond butter
  • 2 cups cauliflower florets
  • 1 cup apple slices
