  • 4 cups chopped kale (about 3 oz.)
  • 3 garlic cloves, minced
  • ¼ cup salted butter
  • 2 cups (about 8 ½ oz.) all-purpose flour, divided
  • 3 cups whole milk
  • 4 ounces Asiago cheese, grated (about 1 cup)
  • 4 ounces Gruyère cheese, grated (about 1 cup)
  • 4 ounces fontina cheese, grated (about 1 cup)
  • 2 tablespoons sherry vinegar
  • 1 tablespoon plus 1 tsp. kosher salt, divided
  • ½ cup cornstarch
  • Naan bread or pita chips
