Roasted Soy Glazed Eggplant
Ingredients
  • 1 large American/globe eggplant
  • Salt
  • 1 tbsp oil
  •  
  • subheading: Glaze:
  • 2 tbsps honey or sugar
  • 2 tbsps soy sauce
  • 1 tbsp water
  • 1 tsp garlic powder
Steps
  1. Cut eggplants lengthwise and cut diagonal slits onto the flesh side.
  2. *Optional for enhanced flavor: Sprinkle a pinch of salt to eggplant slices and let them sit for 30 minutes to "sweat." Gently pat dry after.*
  3. To a wide pan on medium heat, add 1 tbsp of oil and grill eggplant flesh side down until browned. Turn off heat, flip eggplant over, cover the pan, and let it sit for 5 mins]
  4. Add glaze ingredients above to a small saucepan, cook on medium heat until slightly thickened. Let it cool and it will continue to thicken.
  5. Transfer eggplant to a baking sheet and brush glaze lightly. Roast in oven at 425° for 30 mins or airfry at 375° for 15 mins. Drizzle or brush on remaining glaze
