Vegan, Gluten Free Banana Bread (Fodmap Friendly, Refined Sugar Free)
Ingredients
  • 1 cup fine white rice flour 160g
  • ¾ cup tapioca flour 75g
  • 1 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 300 g frozen or fresh bananas (see notes) weighed after peeling
  • ½ cup pure maple syrup
  • ⅓ cup plant milk of choice I used soy milk
  • ⅓ cup oil I used olive
  • 1 to 2 tbsp coconut sugar (optional)
  • 1 teaspoon sea salt flakes
  • 2 teaspoons vanilla bean paste
  • handful of blueberries optional
