Spanish Paella Recipe (Paella Valenciana)
Ingredients
  • ⅓ cup virgin or extra virgin olive oil preferably Spanish
  • ½ whole chicken chopped into about 15 pieces
  • 1 lb pork ribs chopped into small pieces
  • 4 garlic cloves minced
  • ⅓ cup fresh tomatoes grated (about 2 tomatoes)
  • 10 ounces flat green beans cut into 2-inch pieces
  • ⅓ lb butter beans (or garrafón) fresh or canned
  • 2 teaspoons sweet Spanish paprika preferably unsmoked
  • 1 pinch saffron about 10 threads
  • 14.1 oz Spanish short-grain round rice such as Senia, Bomba, or Calasparra
  • 1.5 tablespoon salt
  • 9 cups water
  • ½ whole rabbit (optional) cut into small pieces (omit ribs if using)
