Low Carb Mac and Cheese!
Ingredients
  • This base cheese sauce barely has carbs, if any. The carbs will come from the pasta alternative you choose to use with it, and the toppings, so it will vary.
  • Keto roux (4 tablespoons butter + ⅛ cup whey protein isolate) (whisk more than we did or it might be slightly gritty!) alternatively I have had luck using about 4 ounces of cream cheese to thicken the cheese sauce.
  • 1 cup of chicken broth/stock
  • 1.5 cups heavy cream
  • 2.5 cups shredded colby jack cheese
  • 1 (additional) cup shredded Colby jack cheese for layering in your dishes
  • Toppings: cooked bacon, toasted pork panko, parsley, caramelized onions
