Kung Pao Roasted Cauliflower
Ingredients
  • 2 (12-oz) pkg cauliflower florets, halved
  • 2 Tbsp sesame oil
  • ½ (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery), thawed
  • 1 (8-oz) can sliced water chestnuts, chopped
  • 1 cup water
  • ¼ cup low-sodium soy sauce
  • 1½ Tbsp Asian chili garlic sauce (or use Sambal Oelek)
  • 1 Tbsp cornstarch
  • 1 Tbsp brown sugar
  • 1 cup roasted, salted cashews
