Quick Southern-Style Collards

Ingredients
  • 8 ounces bacon, chopped
  • 1 sweet onion, diced
  • 1 to 2 bunches collard greens, washed, stems removed and chopped
  • ½ cup chicken broth or ¼ cup ACV vinegar
  • 1 tsp crushed red pepper flakes
  • salt and pepper
Steps
  1. Place bacon in cold 12-inch skillet. Heat over medium heat and cook until bacon is crisp, transfer to towels to drain.
  2. Add onion to bacon fat and cook until soft.
  3. Stir in collards, broth, salt, peppers, cook until tender but still bright green, 4 to 5 minutes.
  4. Taste and adjust seasonings.
  5. Add bacon, toss and serve warm.
