Pumpkin Pie Overnight Oats
Ingredients
  • ½ cup old fashioned oats
  • ½ cup almond milk
  • ½ teaspoon pumpkin pie spice
  • ¼ cup canned pumpkin (not pumpkin pie filling)
  • ½ Tablespoon chia seeds
  • 1 Tablespoon maple syrup
  • pinch of sea salt
  • 2 teaspoons hemp seeds (optional)
  • 2 teaspoons pepitas (optional)
  • optional: ½ scoop protein powder or ¼ cup plain Greek yogurt for added protein
  • toppings: dried cranberries, granola and nut butter for topping
