Paul West's Easy Pork Meatball and Rigatoni Pasta Bake
Ingredients
  • 400g rigatoni pasta
  • 750g pork sausages
  • ⅓ cup (80ml) extra virgin olive oil
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 6 sprigs thyme, leaves picked
  • 2 tsp fennel seeds, toasted and crushed
  • 2 tbs tomato paste
  • 500g truss tomatoes, chopped
  • 150g buffalo mozzarella (or mozzarella)
  • ½ cup (40g) grated parmesan
  • Micro basil or basil leaves to serve
