Harissa Pasta 1 Skillet
Ingredients
  • 2 teaspoons oil
  • 4 cloves garlic minced
  • ½ cup ( 80 g) chopped onion
  • 4 ounces ( 113.4 g) thinly sliced mushrooms
  • 3 tablespoons harissa paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 2 tablespoons nutritional yeast
  • ½ red bell pepper sliced
  • 2.5 cups water or stock
  • 6 ounces ( 170.1 g) spaghetti or other pasta of choice
  • ½ teaspoon or more salt
  • subheading: To add later:
  • ½ cup ( 118.29 ml) cashew cream or tofu cream (⅓ cup of cashews blended with ½ cup of water OR ½ cup silken tofu blended with 2 tbsp water)
  • 3 tablespoons vegan parmesan
  • subheading: For garnish:
  • chopped parsley, vegan parmesan
