Ingredients
  • 1.5 lbs ground beef
  • 1 onion diced
  • 2 bags of tortilla chips
  • 2 large 28oz cans of Enchilada Sauce green or red
  • 1 large 24 oz. jar of your favorite salsa
  • 2 lbs. Mexican blend cheese (yellow and white mixed) shredded
  • 1 lb. Mexican blend or Taco cheese shredded
  • subheading: Topping:
  • 1 can sliced olives
  • 16 oz. sour cream
Steps
  1. Brown ground beef with diced onions
  2. Smash up tortilla chips and pour into a very large mixing bowl or big pot
  3. Pour in Salsa, Enchilada Sauce, 2 lbs bag of cheese, meat and onions and mix well. Top with remaining 1lb cheese.
  4. Put into casserole dish. Bake at 350 for one hour
  5. Top off servings with sour cream and olive slices

  • This recipe will have extra. you might need an additional baking dish. Cut recipe in half if there is just 4 people in your family.
