Tomato Quinoa Bake

Ingredients

  • 1 small shallot, minced (about 2 tablespoons)
  • 1 cup uncooked quinoa
  • ¼ cup chopped tomatoes
  • 1 cup vegetable broth
  • ¾ cup water or more broth
  • ¼ cup Tuscanini Tomato Juice
  • salt, to taste
  • pepper, to taste
